  • Prep Time1 min

For the mayo

  • 1/3 cup extra light olive oil
  • 1/3 cup coconut oil, unflavoured, liquid
  • 1/3 cup avocado oil
  • 1 large egg, room temperature
  • 1 tsp lemon juice
  • 1 tsp Apple cider vinegar
  • 1 1/2 tsp Dijon mustard
  • 1 tsp salt
  • 1/2 tsp pepper

Place all ingredients into the cylinder of an immersion blender, allowing the egg to sink to the bottom.
Place the immersion blender on the bottom and slowly raise it from the bottom to the top. You will see the texture if the ingredients change as they become mayonnaise
Use immediately or store in your refrigerator for up to one week.

One egg emulsifies one cup of liquid. If your mayo is not coming together try one more emulsified egg and blend again.
