Pike House Mayonnaise
Pike House Mayonnaise is a delightfully light homemade mayo recipe that will serve well as a sandwich spread or a basis as a great salad dressing. Like many of our recipes, this one took many attempts before we reached the perfect blend of olive oil, coconut oil, and avocado oil. We also use farm-fresh eggs in this Mayo recipe, but eggs from the store will do as well. Just make sure the eggs are room temperature.

Ingredients
For the mayo
- 1/3 cup extra light olive oil
- 1/3 cup coconut oil, unflavoured, liquid
- 1/3 cup avocado oil
- 1 large egg, room temperature
- 1 tsp lemon juice
- 1 tsp Apple cider vinegar
- 1 1/2 tsp Dijon mustard
- 1 tsp salt
- 1/2 tsp pepper
Directions
Place all ingredients into the cylinder of an immersion blender, allowing the egg to sink to the bottom.
Place the immersion blender on the bottom and slowly raise it from the bottom to the top. You will see the texture if the ingredients change as they become mayonnaise
Use immediately or store in your refrigerator for up to one week.
