Garlic Ginger Arctic Char
This is a quick supper that’s easy enough to serve to family, yet delicious enough to serve to your best company. Make sure you buy the fish with the skin still on, as the skin helps to hold in the moisture and make it super yummy.
We serve this with sautéed bok choy or an Asian stir fry.

Ingredients
For the char
- 2 artic char filets
- 2 tbsp coconut sauce
- 1/2 cup tomato sauce
- 2 tsp sesame oil
- 1 tbsp vinegar
- 3 cloves garlic, minced
- 1 tsp ginger, minced
- 1 tbsp Fish Sauce
- Korean chili to taste
- Himalayan salt and pepper to taste
Directions

Combine coconut sauce, vinegar, ginger, fish sauce and garlic in a flat dish.
Place char filet in the marinate, skin side up.
Spoon the marinade over the char and set aside for 10-15 minutes.
Add Sesame oil to a skillet and bring to a medium high heat.
Add char to the pan skin side down and cook for 4-5 minutes or until crisp. Turn char over and cook the other side.
Add extra marinate to the pan and bring it to a boil.
Remove char and set aside.
Add Korean chili, salt and pepper to the sauce and continue to boil until it is reduced.
Spoon sauce over fish and serve
Salmon, or trout can be used in place of the char
