Heat Avocado oil in a large roasting pan over medium-high heat.
Add the chicken thighs and saute until brown and then flip and brown other side.
Remove the pan from heat and add garlic, butter, garam masala, salt and pepper and broth to the roasting pan and cover.
Bake for 275 for one hour.
When chicken is cooked, remove thighs from the pan and cut them into 1-inch chunks. Set aside.
Add remaining ingredients to the stock in the pan, with the exception of Sweetener, cream and milk.
Stir to combine and simmer over medium heat for 15 minutes until the sauce begins to thicken.
Let sauce cool and partially blend with an immersion blender, being careful to leave small pieces of tomato and onion for texture.
Stir in chicken, sweetener, cream and milk, then simmer for five minutes to blend the flavours and finish the dish.
