Easy Butter Chicken

This is one of our favorite recipes to cook up together on a lazy weekend day spent in the kitchen. We start cooking breakfast and after clean up, we merge right into our favourite recipe of spicy and pungent butter chicken. We usually cook this one into a double or even triple batch and freeze the extra sauce or combined chicken and sauce for a quick and tasty meal down the road.

Ingredients

For the Chicken

  • 10-12 chicken thighs
  • 3 tbsp avocado oil
  • 3 cloves minced garlic
  • 2 tbsp butter
  • Himalayan salt and pepper to taste
  • 1 tbsp garam masala
  • 4 cup chicken stock

For the Sauce

  • 3 cloves minced garlic
  • 1 large white onion, diced
  • 1 large can San Marzano tomatoes, diced
  • 1 Tbsp Coconut sauce
  • 1 Tbsp Fish sauce
  • 1 Tbsp red pepper flakes
  • 1 tablespoon garam masala
  • 1 teaspoon ground turmeric
  • 1 tsp ground coriander
  • 1 tsp ground cardamom
  • 1 tsp freshly ground nutmeg
  • 1 tsp ground cumin
  • 2 tbsp chili powder
  • 2 tbsp lemon juice
  • 2 tbsp finely grated fresh ginger
  • ¼ cup melted butter
  • Confectioners Swerve to taste ( I added 1/4 cup)
  • 1 cup cream
  • ½ cup Coconut milk

Method

  1. Heat Avocado oil in a large roasting pan over medium-high heat.
  2. Add the chicken thighs and saute until brown and then flip and brown other side.
  3. Remove the pan from heat and add garlic, butter, garam masala, salt and pepper and broth to the roasting pan and cover.
  4. Bake for 275 for one hour.
  5. When chicken is cooked, remove thighs from the pan and cut them into 1-inch chunks. Set aside.
  6. Add remaining ingredients to the stock in the pan, with the exception of Sweetener, cream and milk.
  7. Stir to combine and simmer over medium heat for 15 minutes until the sauce begins to thicken.
  8. Let sauce cool and partially blend with an immersion blender, being careful to leave small pieces of tomato and onion for texture.
  9. Stir in chicken, sweetener, cream and milk, then simmer for five minutes to blend the flavours and finish the dish.
