Chicken and Chive Unwich

With this in mind, we eat most of our sandwiches, or ‘unwiches’ right out of a bowl with a spoon these days. No fuss, no mess.

For the presentation of this unwich, we chose to use lettuce cups so the bright green cups would showcase the contents of the filling. I will say that Hubby and I both expressed frustration at eating these lettuce cups, as they were incredibly messy. So much simpler to just spoon it up and if you want lettuce, you can just add it to the contents of the unwich.

Combine all ingredients in a medium sized bowl and mix well
Serve on a lettuce cup or spoon up.
