Chicken and Chive Unwich
One of the biggest things to get your head around in the keto world, is the fact that you don't need to hold food in your hand for it to be good. Its only since the beginnings of the fast food industry in the 20's that we've had a fascination with this. A hamburger patty with all the fixins (no bread) will taste just as good on a plate cut with a knife and fork as it does held in your hand. With this in mind, we eat most of our sandwiches, or 'unwiches' right out of a bowl with a spoon these days. No fuss, no mess.
For the presentation of this unwich, we chose to use lettuce cups so the bright green cups would showcase the contents of the filling. I will say that Hubby and I both expressed frustration at eating these lettuce cups, as they were incredibly messy. So much simpler to just spoon it up and if you want lettuce, you can just add it to the contents of the unwich.

Ingredients
For the unwich
- 6 oz cooked chicken, cubed
- 4 Boston lettuce leafs (for lettuce cups)
- 4 strips of cooked bacon
- 3 Tbsp of mayo (to taste)
- 1/8 cup green onion or chives
- 1/2 cup cherry tomatoes, chopped
- 1/4 cup fresh basil, chopped into ribbons
- 1 Tbsp apple cider vinegar
- Himalayan pink salt and pepper to taste
Directions

Combine all ingredients in a medium sized bowl and mix well
Serve on a lettuce cup or spoon up.
