  • 2 Tbsp. EVOO or bacon fat.
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 1/2 tsp dried basil
  • ½ tsp rosemary
  • 1/2 tsp red pepper flakes
  • 28 oz can San Marzano Tomatoes
  • 1 tsp Parmesan cheese
  • Himalayan salt and Pepper to taste
  • 2 Tbsp. red wine vinegar


  1. Saute onion in the oil until translucent.
  2. Add garlic and continue to cook for 3 minutes.
  3. Push onions and garlic to the sides of the pan and add the herbs and spices. One by one, right into the oil.  Then combine with the onions and garlic and reduce to a simmer.
  4. Puree the tomatoes in an immersion blender or bullet and add them to the mixture.
  5. Stir in the remaining ingredients and simmer for at least 15 minutes.
Recipe Note –
Real Onion and garlic is our preference for this recipe, but dehydrated versions may be used. In which case add 1 tsp of garlic and onion powder to the spices listed.
