Fettuccine Alfredo with sauteed chicken Breast and Bacon

Fettuccine Alfredo with Sautéed Chicken Breast and Bacon is a deeply satisfying, crowd-pleasing dinner that is quick and easy to make. The creamy homemade Alfredo sauce, amplified by the bacon, is the feature in this family favourite meal.

Make sure you add the nutmeg. It sounds out of place, but it’s really that hidden little ingredient that makes the dish go 'OMG! Delish'.

Ingredients

For the alfredo sauce

  • 1 Tbsp. butter
  • 7 cloves garlic
  • 1 1/2 cup 35% cream
  • 3/4 cup Grated Parmesan cheese
  • 1/4 tsp thyme
  • Himalayan Salt and Pepper to taste
  • Nutmeg, pinch

For the chicken/noodles

  • 2 Tbsp. butter
  • 2 boneless/skinless chicken breasts, cut into thin strips
  • 1 clove garlic
  • 1 green onion, chopped
  • 3 strips bacon, cooked and chopped into pieces.
  • 1/2 tsp parsley
  • 1/4 tsp thyme
  • Himalayan Salt and Pepper to taste
  • Konjac Noodles, well rinsed and drained (We use NuPasta)

Directions

For the Sauce
Melt butter in a medium saucepan over medium heat. Add minced garlic and sauté for about 1 minute
Add the 35% cream. Bring to a gentle simmer, then continue to simmer for about 10 minutes, or until sauce starts to thicken. Be careful, this can easily bubble over.
Reduce heat to low. Slowly whisk in the cheese. Whisk until smooth.
Add Himalayan salt, and pepper.

For the Chicken
Add butter to a medium skillet
Sauté the chicken under medium heat for five minutes.
Add garlic and continue to cook under low heat while sauce is cooking.
Add green onion, bacon and spices and stir to combine.
Continue to cook until the chicken starts to slightly brown.
Set aside

Putting it together
Add the konjac noodles to the chicken pan and cook for 5 minutes.
Slowly spoon on the Alfredo sauce, being careful not to drown the noodles. As there’s only 2 of us, we held some sauce back and froze it for another meal.
Simmer the noodles and sauce for 5 minutes, then plate.
Add chicken with bacon to the top of the pasta and serve.

If sauce is thicker than you like, add a little extra cream.
