Vanilla Cheesecake Ice Cream (with optional berries)

Screams/recipes for ice cream recipes is also something we hear often on keto forums and to answer your question, YES!! There is a way we can have ice cream.
This is my version of a cream cheese or cheesecake ice cream Its best eaten within 24 hours. There are no stabilizers in this recipe, so after that time frame its gets too hard. If you do leave it after the 24 hour mark, just let it sit in the fridge for about 30 minutes or so and it will soften.

Ingredients

  • 1 cup 35% whipping cream
  • 1/4 cup cream cheese
  • 2 tablespoons powdered sweetener
  • 1 tsp vanilla extract
  • 1/8 tsp Himalayan pink salt.
  • 6 raspberries (optional)
  1. Blend all ingredients (except berries if you are using them) with an immersion blender for 5 minutes.
  2. Place in a container and freeze for 3 hours to 24 hours.
Recipe notes-
Any berries can be used for this recipe
Add 2 Tbsp of cocoa for chocolate ice cream
Most of the carbs are in the cream cheese in this recipe. Cream cheese can be omitted for a lower carb version
