When I was younger I would always look forward to springtime and a trip to the local Tim Hortons for a Strawberry Tart. They were only available for a limited time each year, but boyyyy did I make the best of that short window! For me, this recipe brings back, childhood, spring and family time all rolled into one delicious bite.

Our version of the strawberry custard tart has a cookie crumb base which really adds to the overall dish on our opinion. We prefer to cook this a family style dish, but it can be cooked in individual tarts. This recipe has been a family favourite for years, when we started to keto-fy recipes, this one was right at the top of the list!

For the Crust

Combine all ingredients and press into a flan or spring for pan.
Bake at 350 for 15-17 minutes or until crust lightly brown
Set aside to cool.

For the Custard

Combine first 3 ingredients in a medium sauce pan.
Simmer for 10 minutes.
In a separate bowl, whisk eggs and egg yolks together
Next, slowly incorporate hot liquid into egg, (temper the eggs) by whisking.
Add sweetener
Whisk in xanthan a little bit of a time.
Cook under medium heat for 5 minutes, stirring constantly.
Set aside to cool.

To assemble

Spoon custard over crust.
Arrange strawberries over the top of the custard
Refrigerate. Don’t try to cut until the tart is totally cold.
